Mediterranean Salad

  • Ingredients:
  • 2 qts. torn romaine lettuce
  • 1 cup thinly sliced cucumber
  • 1 cup cherry tomatoes, halved
  • 3 oz. feta cheese, crumbled (about 3/4 cup)
  • 3/4 cup cooked, shelled, cooled Edamame
  • 1/2 cup red onion slivers
  • 1/4 cup Marukan Seasoned Gourmet Rice Vinegar Lite Dressing
  • 2 Tbsp. olive oil
  • 1/4 tsp. oregano, crumbled
  • 1/8 tsp. black pepper
  • 1/8 tsp. garlic powder

  • Instructions:
  • Combine in large bowl. Toss and serve. Makes 4 servings.
