Asian Kanikama Salad

Ingredients
  • 3 Tbsp Pietro Shoyu Dressing (jfc.com/product/item/89320)
  • 8 sticks Kanikama (imitation crab)
  • 1/2 cup Wel-Pac Shelled Edamame (jfc.com/product/item/18468)
  • 1 portion Dynasty Maifun Rice Sticks (jfc.com/product/item/03188)
  • 1/3 cup red cabbage, julienned1
  • /3 cup matchstick carrots
  • 1/3 cup cucumber, julienned
  • 1/2 cup Napa cabbage, thinly sliced
  • Green onion, sliced (as garnish)
Directions
  1. Cook the noodles and edamame. Prepare the Dynasty Maifun and Wel-Pac Shelled Edamame according to their package directions. Set both aside to cool completely before assembling.
  2. Prep the vegetables. Julienne the red cabbage, cucumber, and Napa cabbage into thin, even strips. Matchstick carrots can be used pre-cut or sliced to match.
  3. Assemble the salad. Add the cooled Maifun, edamame, Kanikama, and all vegetables into a large salad bowl. Drizzle with Pietro Shoyu Dressing and toss everything together until well combined.
  4. Garnish and serve. Top with sliced green onion and serve immediately.
