Baked Thai Tofu

Ingredients
  • 1 package firm fried tofu, cut into 2 inch triangles
  • 2 Tbsp. dark soy sauce
  • 1 tsp. turmeric
  • 1 tsp. cumin
  • 1 tsp. coriander
  • 2 tsp. brown sugar
  • 1 tsp. garlic powder
  • ¼ cup peanut butter
  • ⅓ cup J-Basket coconut milk
  • 2 Tbsp. Kikkoman soy sauce
  • 1 Tbsp. Nishiki rice wine vinegar
  • ½ Tbsp. Jbasket Sesame Oil
  • ¼ tsp. grated ginger
  • 1 Tbsp. chili garlic sauce
  • ⅛ tsp. Thai chili pepper flakes
  • sliced green onion, for topping
Directions
  1. Preheat the oven to 425˚F. Line a baking sheet with parchment paper.
  2. Add the dark soy sauce, turmeric, cumin, coriander, half of the brown sugar, and garlic powder to a bowl. Mix to combine. Toss the tofu together with the spice mixture and allow it to marinate for 5 minutes.
  3. Place the tofu onto the prepared baking sheet. And bake for 10 minutes.
  4. In the meantime, add the peanut butter, J-Basket coconut milk, Kikkoman soy sauce, Nishiki rice vinegar, J-basket Sesame Oil, ginger, chili garlic sauce, Thai chili pepper flakes, and remaining half of the brown sugar to a bowl. Mix to combine.
  5. When the tofu is done cooking, brush the tops with the peanut sauce and bake for 5 minutes. Flip the tofu onto the other side and brush with the peanut sauce. Bake for another 5 minutes. Remove the tofu from the oven and garnish with sliced green onions. Enjoy!
