Banana Bread

Ingredients
  • ½ cup pasture butter, softened
  • 2 Tbsp. J-Basket Coconut Milk
  • 1 cup sugar
  • 2 eggs, beaten
  • 1 cup coconut flour
  • ½ cup oat flour
  • ½ tsp salt
  • 1 tsp. baking soda
  • 1 tsp vanilla extract
  • 1 cup roughly chopped walnuts
  • 1 cup semi sweet chocolate chips
Directions
  1. Preheat oven to 350 degrees F.
  2. In a large bowl add the softened butter, sugar and J-Basket coconut milk and whip together with a hand mixer, or whisk.
  3. Then add the beaten eggs, bananas and keep mixing until combined well.
  4. Slowly add in the coconut flour, oat flour, baking soda, salt and vanilla. Keep mixing until batter has formed and is mixed through.
  5. Fold in walnuts and chocolate chips and then spoon into your pre greased loaf pan.
  6. *optional: slice banana long ways and then gently press both slices into the top of the batter, running along the top.*
  7. Pop in the oven on the middle rack for 50 minutes until the edges start to crisp up. If the top begins to brown or darken too quick lightly cover with foil and keep cooking until the middle comes out clean.
  8. Remove from pan and place on a cooling rack.
