Breakfast Egg Rolls


Prep time: 30 minutes

Cook time: 12 minutes

  • 1 Tbsp unsalted butter
  • 8 large eggs, beaten
  • salt and pepper, for seasoning
  • 8 Dynasty Egg Roll Wrappers
  • 4 stalks green onion, green parts only cut into 2 inch pieces
  • 8 strips bacon, cooked
  • 1 cup shredded cheddar cheese
  • vegetable oil, for frying
  • shredded green onion for garnish
  1. Heat a pan over medium heat. Add in the butter and allow it to melt. Pour in the beaten eggs. Season with salt and pepper to taste. When the bottom begins to cook, push the eggs around with a rubber spatula until they are soft scrambled. Remove them from the pan and set aside.
  2. Place about ½ a cup of the scrambled eggs into the center of a Dynasty Egg Roll Wrapper.  Then layer on 2-4 pieces of green onion, 1 strip of bacon, and about 1 tablespoon of cheddar cheese. Moisten the edges of the wrapper with water then fold up the egg roll wrapper like you would a burrito. Repeat this process to make the remaining breakfast egg rolls.
  3. Heat 2 inches of vegetable oil in a pan to 375˚F. Working in batches, add in the egg rolls and cook for 2-3 minutes until golden brown.
  4. Remove the egg rolls from the oil and place them on a cooling rack to drain. Garnish with shredded green onions. Enjoy!
