Breakfast Fried Rice

Ingredients
  • 12 oz spam
  • 2 tbsp butter
  • 1 medium white onion, diced
  • 2 cloves garlic, minced
  • 3 cups cold cooked Dynasty Jasmine Rice
  • 3 tbsp Kikkoman Soy Sauce
  • 2 tsp Dynasty Sesame Oil
  • ½ cup shredded carrots
  • ½ cup diced red bell pepper
  • 1 egg, fried sunny side up
  • 4 green onions, sliced
Directions
  1. Line a plate with paper towels. Set aside.
  2. Add spam to a pan on medium heat. Cook the spam, stirring occasionally, until the fat renders and it gets crispy, 5-7 minutes. Remove and transfer to the prepared plate to drain.
  3. To the same pan, add butter and melt. Add the onion, toss to coat in the fat, and sauté until translucent, 5-6 minutes.
  4. Add the garlic and cook, stirring constantly, until very fragrant, about 1 minute more.
  5. Add the Dynasty Jasmine Rice to the skillet and toss with the onions and garlic until well combined. Smooth the rice and onion mixture into an even layer and fry, undisturbed, for 4-5 minutes.
  6. Pour the Kikkoman Soy Sauce over the rice, then loosen the rice from the bottom of the skillet with a wooden spoon, stirring the Kikkoman Soy Sauce into the rice. Add the carrots, bell pepper, and Dynasty Sesame Oil. Work the vegetables into the rice, tossing frequently, until the vegetables are warmed through and the rice appears dry.
  7. Remove the skillet from heat. Stir in the pan, top with the fried egg, and garnish with green onions.
