Bring 1 ⅓ cup water to a boil. Add Dynasty Brown Rice over high heat. Lower the heat to low, stir, and let simmer for 15 minutes or until all the water has evaporated.
In a small pot, add Dynasty Coconut Milk, coconut sugar, and salt. Heat to a low simmer. Add cooked rice and cook for another 15 minutes or until the pudding has thickened, stirring often. Remove from heat and stir in chocolate chips and vanilla extract.
Let the chocolate melt and then, place in the fridge for an hour.
In a serving bowl or glass mug, serve the pudding and top with whipped cream and sprinkles of cinnamon and Celtic sea salt.
