Coconut Waffles

  • 1 ½ cup J-Basket Coconut Milk
  • 1 ½ whole wheat flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 tablespoons melted coconut oil
  • 1 egg
  • 2 tablespoons raw honey
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries
  • ½ cup whipped cream
  • ¼ cup maple syrup
  1. In a mixing bowl, add the flour, baking powder, and salt. Whisk together.
  2. In a separate bowl, mix the wet ingredients: coconut milk, coconut oil, egg, honey, and vanilla. Slowly pour mixture into the dry ingredients and whisk until smooth and mixed.
  3. Heat your waffle maker and spray with a little cooking oil. Ladle the mixture into the waffle maker, until it fills up the square. Close until ready. Serve right away while warm and top with fresh raspberries and maple syrup.
