Cold Tan Tan Udon

Ingredients
  • 7 oz dried or 16 oz frozen J-Basket udon noodles
  • Leeks for garnish
  • Chili oil as needed
  • J-Basket roasted white sesame seeds as needed

Meat:

  • 1 tsp vegetable oil
  • 1 tsp grated ginger
  • 7 oz minced pork
  • 2 tbsp Kikkoman aji mirin
  • 2 tbsp Kikkoman shiro dashi

Broth:

  • 5 fl oz Kikkoman shiro dashi
  • 20 fl oz Kikkoman unsweetened soymilk
Directions
  1. Cook the meat. Heat oil and grated ginger in a frying pan over medium heat, add minced meat and sauté. When cooked, add Kikkoman shiro dashi & mirin. Simmer until all the liquid is absorbed.
  2. Mix the broth ingredients and cool.
  3. Boil J-Basket udon noodles according to the package instructions, rinse in cold water and drain in a strainer.
  4. Put the udon noodles in a bowl, top with mixture 1, pour the chilled broth, and top with the leeks. Sprinkle with chili oil and sesame seeds to taste.
