- Cook the meat. Heat oil and grated ginger in a frying pan over medium heat, add minced meat and sauté. When cooked, add Kikkoman shiro dashi & mirin. Simmer until all the liquid is absorbed.
- Mix the broth ingredients and cool.
- Boil J-Basket udon noodles according to the package instructions, rinse in cold water and drain in a strainer.
- Put the udon noodles in a bowl, top with mixture 1, pour the chilled broth, and top with the leeks. Sprinkle with chili oil and sesame seeds to taste.
