Finely dice the onion and sprinkle with potato starch until well-coated.
Knead and mix the ground pork, soy sauce, sugar, sesame oil, ginger, and pepper together. Add in potato starch-coated onions and mix until well combined.
Cut each soy sheet into quarters. Divide meat mixture into eighths. Place 1/8 of the meat mixture on each small soy sheet and fold upwards to encase the meat on the sides, leaving the top open.
