In a skillet, heat the olive oil over medium heat.
Sprinkle the salmon with salt on both sides.
When oil is hot place the salmon skin side down in the pan. Cook without touching for 3 minutes and flip over. Cook until the outside is crispy and the meat is cooked through. Should be about 6 minutes or so.
Make the salsa but cutting up the tomato, jalapeno, cilantro, onion and mango and mixing it all together into a bowl.
Glaze the salmon with some sweet and sour sauce and then scoop the mango salsa over the top of the salmon before serving.
