Crispy Scallop Potatoes with Garlic Parmesan


Prep Time: 15 minutes

Cook Time: 1 hour

  • 4 lbs Yukon gold potatoes
  • 1 stick of unsalted butter, melted
  • 1 tablespoon chopped thyme
  • 1 garlic clove, minced
  • 1 tablespoon sea salt
  • ½ cup grated parmesan cheese
  • ¼ cup Dynasty Panko
  • 1 tablespoon fresh chopped parsley, garnish
  1. Preheat oven to 375 degrees F.
  2. Thinly slice the potatoes with a knife or mandolin and set them aside.
  3. Butter the cast iron skillet and then place the potato slices vertically filling the skillet.
  4. Pour the melted butter over the potatoes and sprinkle the minced garlic, panko and then the parmesan cheese. Season with salt and place in the oven to bake for about an hour until the potatoes are crispy.
  5. Take out and let cool for 10 minutes. Top with more fresh grated parmesan cheese and chopped parsley.
