Edamame Salad with Cilantro & Lime

Ingredients
  • 1 cups corn
  • 1 cups J-Basket edamame
  • ⅓ cup chopped green onion
  • 1 red bell pepper
  • ½ cup chopped red onion
  • ½ cup chopped cilantro
  • 1 Tsp. olive oil
  • Salt and pepper
Directions
  1. Steam the J-Basket edamame pods as directed on the package and then once cooled slide out the beans into a bowl (about 1 cup).
  2. In a large bowl place the corn, edamame, chopped red bell pepper, chopped red onion, fresh chopped cilantro.
  3. Drizzle with the olive oil and season with salt and pepper. Give a nice big mix and serve right away while fresh.

Optional: Serve with J-Basket creamy miso dressing.
