
Eel and Arugula Pizza
- 80g (2.8oz) Oceanus Unagi Kabayaki
- 2 pieces Pizza dough (store bought or self made) - approximately 17cm (6.7in) in diameter
- 10-15g (0.4-0.5oz) Arugula
- 1/8 Red onion
- 60-80g (2.1-2.8oz) Baby mozzarella cheese
- 1 tsp Olive oil
- Arugula (for garnish) as needed
Pizza sauce
- 50g (1.8oz) Canned chopped tomatoes
- 2 Tbsps Ketchup
- ½ tsp Grated garlic
- A pinch of Salt
- A pinch of black pepper
- A pinch of chili pepper
- Make the pizza sauce by combining the sauce ingredients in a bowl and microwave for about 30 seconds (20 seconds for 1000W microwaves).
- Thaw the frozen eel, cut it in half, and then slice it into 2cm (0.8in) strips.
- Cut the arugula into pieces about 2-3cm (0.8-1.2 in) wide.
- Slice the red onion thinly.
- Spread pizza sauce over the pizza dough, evenly distribute the ingredients from step 2, and top with baby mozzarella cheese. Bake in a toaster oven at 1200W for about 5 minutes (if using an oven, bake at 250°C/482°F for a similar amount of time). Drizzle with olive oil and garnish with fresh arugula before serving.
