Bring a pot of water to a boil. When water is boiling, throw in your bok choy and blanche for 30 seconds. As soon as they start to wilt, take them out to drain and set aside.
In a small pan over medium heat, add the sesame oil, garlic, oyster sauce, white pepper, and honey. Mix well and heat for 2-3 minutes.
Plate your bok choy and then, pour the sauce over them. Top with crushed peanuts. Serve immediately.
