Lemon Garlic Vegetable Pasta


20 Minutes

  • 16 oz. linguine
  • 2 Tbsp. olive oil
  • 2 garlic cloves, sliced
  • 1 pint cherry tomatoes, halved
  • 1 can Dynasty Baby Corn
  • 5 oz. chopped kale
  • juice from 1 lemon
  • ¼ cup grated parmesan cheese
  • red pepper flakes, to taste
  • salt and pepper, to taste
  1. Bring a pot of water to a boil. Cook the linguine according to the package directions. Drain and rinse under cold water. 
  2. Heat a large pan over medium heat. Add in the garlic and cook until lightly browned and fragrant. Mix in the cherry tomatoes and Dynasty Baby Corn. Cook for 2-3 minutes. Then mix in the kale and cook until it starts to wilt. Add in the linguine, lemon juice, and parmesan cheese. Season with red pepper flakes, salt, and pepper to taste. Enjoy!
