Lime and Lychee Pudding


Total Time: 2 hours and 30 minutes

  • 2 cups heavy cream
  • ⅔ cup granulated sugar
  • 1 Tbsp lime zest
  • Pinch of salt
  • ⅓ cup lime juice
  • 1 can of Dynasty Lychees
  • Additional lime zest, for garnish
  • whipped cream, for topping
  1. Add the heavy cream, sugar, lime zest, and salt to a pot.
  2. Whisk the ingredients together and heat over medium heat until the mixture comes to a boil.
  3. Boil for 8-10 minutes, while whisking frequently, until the mixture reduces to 2 cups.
  4. Mix in the lime juice and allow the mixture to sit off heat for 20 minutes.
  5. Pour the mixture through a strainer into a liquid measuring cup.
  6. Pour half of the mixture into one of the serving glasses and the remaining half in the second glass.
  7. Refrigerate until the pudding has set, about 2 hours.
  8. Top with a spoonful of whipped cream, a lychee, and lime zest.
