Lime and Sesame Grilled Eggplant

  • 1 pound Japanese eggplant
  • 1/4 cup vegetable oil, plus extra for brushing
  • 1-inch knob fresh ginger, grated
  • 1 Tbsp. Kikkoman Soy Sauce
  • 1 tsp. Dynasty Sesame Oil
  • 1 tsp. Nishiki rice vinegar
  • Lime wedges, for garnish
  • J-Basket Roasted sesame seeds, for garnish
  • Chopped cilantro, for garnish
  1. Cut the eggplant into 4 pieces lengthwise
  2. In a large bowl mix together the vegetable oil, ginger, Kikkoman Soy Sauce,Dynasty Sesame Oil and rice vinegar.
  3. Toss the eggplant in the marinade. Heat the grill, and when hot, brush the grill with oil. Place the eggplant directly on the grill, grilling both sides for 3-5 minutes each.
  4. After grilling, brush the eggplant with additional marinade or soy sauce and a squeeze of  lime. Garnish with sesame seeds, cilantro and more lime wedges.
