Miso Ramen Noodles


Total Time: 45 minutes

  • 4 cups chicken broth
  • 1/4 cup creamy miso dressing
  • 2 servings of ramen noodles
  • 2 soft-boiled eggs
  • ¼ cup shredded carrots
  • ½ cup shelled edamame
  • ½ cup corn
  • ¼ cup sliced green onions for garnish
  • black and white sesame seeds for garnish
  1. Heat the chicken broth in a pot over high heat until it comes to a boil.
  2. Add in the creamy miso dressing and mix; then lower the heat to a simmer.
  3. Bring a pot of water to a boil. Add in the ramen noodles and cook until the noodles are al dente. Drain the noodles from the water.
  4. Divide the soup base and noodles between two bowls.
  5. Top each bowl with a soft boiled egg, shredded carrots, edamame, and corn.
  6. Garish the bowl with sliced green onions and black and white sesame seeds.
