Heat up a pan or wok with coconut oil. Add the chopped onion, garlic, ginger. Cook down for 5 minutes.
Then add in the mushrooms and keep cooking down for another 5 minutes until the mushrooms begin to soften.
Next, add the rice and mix all around and let it get crispy. Cook for 10-15 minutes and then add in the chili oil, fish sauce, salt and pepper. Keep cooking until the rice gets crispy on the bottom.
When the fried rice is ready take off the heat and place into a bowl. Cook an egg sunny side up and then place onto the top of the rice and garnish with chopped green onion and cilantro.
