Pineapple Shrimp Curry

Prep Time: 5 minutes

  • 1 Tbsp. oil
  • 1 medium onion finely diced
  • 1 clove garlic minced
  • 1 pound raw jumbo shrimp
  • 2 Tbsp. Thai red curry paste
  • 1 (13.5 oz) can of J-Basket coconut milk
  • 1 Tbsp. Dynasty Fish Sauce
  • ½ cup water
  • 1 cup pineapple chunks
  • Cooked Nishiki rice, for serving
  • Lime wedges, for serving
  • Basil leaves, for garnish
  1. Heat oil in a large skillet over medium-high heat. Saute the onion and garlic until translucent.
  2. Add the shrimp and cook until starting to brown.
  3. Stir in the curry paste, the coconut milk, Dynasty Fish Sauce and the water. Bring to a boil and simmer for 5 minutes. Remove from the heat and stir in the pineapple chunks.
  4. Serve over rice and top with basil leaves and a squeeze of lime.
