Plum Sauce chicken Soba Salad

Ingredients
  • 1 8 oz J-Basket Meijin Soba noodles
  • 1 cup shredded carrots
  • 4 tsp Dynasty Sesame Oil
  • 4 tsp Kikkoman Soy Sauce
  • 2 green onions, finely sliced, plus more for garnish
  • 3 tbsp fresh cilantro, roughly chopped

  • 2 large chicken breasts
  • 1 tbsp olive oil
  • 1 garlic clove
  • 1 teaspoon ginger, grated
  • ¼ cup red wine
  • 2 tbsp Dynasty Plum Sauce
  • 1 tbsp Kikkoman soy sauce
  • 1 tsp honey
  • Salt and pepper to taste
Directions
  1. Cook noodles in a pot of boiling water for 5 minutes.
  2. Add carrots for 30 seconds to cook with the noodles.
  3. Drain, rinse with cold water, drain again
  4. Toss with Dynasty Sesame Oil and Kikkoman Soy Sauce in a bowl.
  5. In a large pan, add 1 tbsp olive oil and cook chicken breasts for 4-5 minutes on medium heat on each side (internal temp of 165), then set aside to rest
  6. In the same pan, clear the bits but keep the oil/fat. Return to medium heat and stir-fry garlic and ginger for 30 seconds
  7. Add red wine and simmer for 1 minute until reduced by half.
  8. Add Dynasty Plum Sauce, Kikkoman Soy Sauce, and honey, stir well, and simmer until slightly thickened; season to taste with Salt and pepper.
  9. Toss green onions and cilantro through noodles
  10. Thinly slice chicken breasts
  11. To serve, divide the noodle mixture between 2 plates. Top with sliced chicken breast and drizzle with prepared plum sauce. Top with green onions, and enjoy!
