Salmon Sashimi with Kimchi Gelée

Ingredients
  • 1 lb. sashimi grade salmon
  • 120 gram J-basket kimchi
  • 1 packet granulated gelatin
  • 6 Tbsp shiro dashi
  • 1 cup water
Directions
  1. Finely chop the kimchi and set it aside.
  2. Pour half of the water into a saucepan. Add the gelatin and mix until it's completely dissolved.
  3. Gently heat the gelatin mixture in the saucepan. As soon as it comes to a boil, turn off the heat.
  4. Pour the rest of the water into the saucepan. Stir in the shiro dashi and the chopped kimchi.
  5. Pour the mixture into a container and place it in the refrigerator for a few hours until it has hardened.
  6. Once the gelée is firm, take it out of the refrigerator and crush it into small pieces.
  7. Serve the crushed gelée on top of salmon sashimi.
