Cook the soba. Prepare the J-Basket Men Meijin Soba according to package directions. Drain, rinse under cold water, and set aside to cool.
Grill the salmon. Season the salmon fillet with your choice of seasoning and grill over medium-high heat until cooked through, about 4 to 5 minutes per side. Set aside to rest, then flake or slice into portions.
Prep the vegetables. Julienne the cucumber, zucchini, and red onion into thin, uniform strips. Drain the Dynasty Sliced Water Chestnuts and pat dry.
Assemble the salad. In a large salad bowl, combine the cooled soba, baby spinach, julienned vegetables, and water chestnuts. Top with the grilled salmon.
Dress and serve. Drizzle the Pietro Sesame Miso Dressing over the salad and toss gently to coat. Serve immediately and enjoy!
