Sushi Bouquet

Ingredients
  • 1 cup Nishiki Rice
  • 1/3 cup Nishiki Sushi Seasoning Vinegar
  • 4 slices each of sashimi grade tuna, salmon, and hamachi (yellow tail)
  • 5 sticks WelPac kanikama (imitation crab)
  • 2 tbs Kewpie mayo
  • ½ avocado
  • 3 Shiso leaves
  • Salmon roe as garnish
Directions
  1. Prepare sushi rice
  2. Cut avocado and into thin slices
  3. Chop Kanikama and mix with mayonnaise
  4. Place 4" cake mold onto plate, fill half of the sushi rice and gently press it down to create an even layer
  5. Layer the avocado slices over the rice, followed by the Kanikama mixture, and gently press down to flatten each layer
  6. Add the remaining rice to the mold and press it down to create a flat top
  7. Carefully remove the cake mold. Decorate the top of the sushi cake with Tuna, salmon, Hamachi, and other desired toppings.
