Thai Pork Glass Noodle Salad

Total time: 30 minutes

  • 2 oz Dynasty Saifun Bean Threads, prepared according to package instructions
  • 1 lb J-basket ground amber pork
  • 1 shallot, sliced
  • 4 tbsp finely chopped cilantro
  • 3 tbsp finely chopped green onions
  • ¼ cup mint leaves
  • Cabbage, snake beans, and green onions to serve


  • 2 tbsp raw glutinous rice
  • 4 tbsp Dynasty Fish Sauce
  • 2 tbsp finely shaved palm sugar
  • 2 tsp chilli powder
  • 3 tbsp lime juice
  1. For the dressing, toast the rice in a dry frying pan over high heat until golden brown. Remove from heat and use a mortar, pestle, or spice grinder to grind rice to a fine powder. Mix the rice powder with the remaining dressing ingredients.
  2. Place a non-stick pan over high heat. When it’s hot, add in the ground pork. Break up the pork as it cooks. When cooked, use a slotted spoon to transfer the pork to the bowl containing the prepared Dynasty Saifun Bean Threads (discard the cooking liquid). While the pork is warm, add the shallots and a couple of tablespoons of the dressing and toss. Add the cilantro, green onion, mint leaves, and the remaining dressing and toss until well combined.
  3. Serve warm with cabbage, beans, and whole green onion.
