Vietnamese Grilled Pork Chop

Ingredients

Pork Chops:

  • 5 bone-in pork chops (about 3 lbs)
  • 3 tablespoons Dynasty Fish Sauce
  • 2 tablespoons Dynasty oyster sauce
  • 2 tablespoons granulated sugar
  • 1 tablespoon honey
  • ½ teaspoon ground black pepper
  • ¼ cup minced lemongrass
  • 1 tablespoon finely minced garlic
  • 2 green onions (thinly sliced; whites/greens separated)
  • 2 tablespoons vegetable oil (divided)

Vietnamese Dipping Sauce (Nuoc Cham)

  • 1 cup hot water
  • 3/4 cup granulated sugar
  • 3 tablespoons lime juice
  • 1 cup coconut soda
  • 3/4 cup Dynasty Fish Sauce
  • 6 garlic cloves, thinly sliced
  • 2 Thai chili peppers, thinly sliced

To serve:

  • Cooked Nishiki white rice (or Dynasty jasmine rice)
  • 1 tomato, sliced
  • 1 cucumber, sliced
  • 1 fried egg
  • Vietnamese dipping sauce
Directions
  1. Marinate pork chops with Dynasty Fish Sauce, Dynasty oyster sauce, sugar, honey, black pepper, lemongrass, garlic, whites of green onions, and 1 Tbsp. Oil for 30 minutes or overnight in the fridge for better results.
  2. Make the dipping sauce: Combine hot water and sugar. Mix until dissolved. Add lime juice, coconut soda, Dynasty Fish Sauce, garlic, and chili peppers. Mix until combined. Set aside.
  3. Grill pork for about 10 minutes per side at medium-high heat or 400°F for thick cuts (over 1 inch thick). Grill for 8 minutes per side for thinner cuts.
  4. Add greens of green onions and remaining oil in a microwave-safe bowl—microwave on high for one minute. Set aside.
  5. Brush pork chops with scallion oil. Serve with steamed rice, a fried egg, thinly sliced cucumbers and tomatoes, and the Vietnamese dipping sauce.
